Our Story
“We are home and so happy to be back in Mississippi, to fulfill a life long dream of owning a business” says Executive Chef & Owner, Jason Penley. On October 28, 2020 that dream became a reality with the opening of Relish Bistro in downtown Vicksburg. This inviting and casual restaurant was started by two brothers, Jason and James Penley, open for dinner from Wednesday to Saturday; and on Sunday for brunch. Both Jason and James are looking forward to the opportunity to work together to bring their guests a wonderful dining experience.

He started his career at the Ritz Carlton at Lake Oconee, Georgia from there he has worked at Commander’s Palace and Cochon’s in New Orleans, Blackberry Farms in Tennessee, and Juliet’s in Austin, TX. Jason studied at University of Southern Mississippi and received a BS in Hospitality Management and then to Le Cordon Blue in Atlanta, Georgia. “I look forward to sharing all that I have learned in my twenty years to Vicksburg and surrounding areas.”, Jason said.

Bringing his knowledge from working in the liquor business, he will be offering spirits and wines for your enjoyment with all your favorites as well as some unexpected new items. James said, “I will work for your satisfaction to insure we have what you need for an enjoyable experience.”
